Good Night All

Recipe of the Day

Alright everybody :) here is today's healthy recipe!


teaspoons canola or olive oil
large onion, chopped (1 cup)
lb boneless skinless chicken thighs, cut into 3/4-inch chunks
cloves garlic, finely chopped
fresh jalapeño chile, seeded, finely chopped (about 1 tablespoon)
can (14.5 oz) Muir Glen® organic fire roasted diced tomatoes, undrained
can (19 oz) Progresso® red kidney beans, drained, rinsed
cup chopped fresh cilantro
tablespoon chili powder
teaspoon salt
cup water
Shredded reduced-fat sharp Cheddar cheese, if desired
  • 1In 4-quart saucepan, heat oil over medium-high heat. Add onion, chicken, garlic and chile; cook 5 to 7 minutes, stirring frequently, until chicken is light golden brown.
  • 2Add tomatoes, beans, 2 tablespoons of the cilantro, the chili powder, salt and water; heat to boiling. Reduce heat to low; simmer 12 to 15 minutes or until chicken is no longer pink in center and flavors are blended, stirring occasionally.
  • 3To serve, sprinkle with remaining cilantro and cheese.

I Misbehaved

Alright, I was in class today and was bad with my diet :S
I ate the following:

I am sorry guys... I shall do better!!! I now know that I am HORRIBLY weak when in class.... but no more!

Weighing in

There is a big debate about whether or not you should weigh yourself daily or weekly.  
Weighing yourself daily has its benefits by showing your real time results, however we fluctuate from day to day and that can be discouraging. Weighing yourself weekly can be more motivating since you won't see the fluctuation as bad and more your overall loss.

As for myself, I know I get discouraged easily and the day to day weighing might hinder my goals. So I will be weighing myself weekly on Mondays. 

Whether you are a daily or weekly weigher, just remember to pick what is best for YOU!

Alright, I slept a little later than I had hoped to today, but I guess my body needed it after yesterday :)

Day One Ends

Well, today was a success in my mind :) I ate breakfast, Zumba-ed like a fiend, and fit in some Wii exercise as well. I am off to bed now and hope to see you all tomorrow morning :) goodnight!!

Recipe of the Day

Mushroom, Tomato, Basil Frittata

Mushroom, Tomato, Basil Frittata
Prep and Cook Time: 20 minutes

  1. Mince onions and press garlic and let sit for 5 minutes to bring out their hidden health benefits.
  2. Heat 1 TBS broth in a 10-inch stainless steel skillet. Healthy Sauté onion over medium low heat for 3 minutes, stirring frequently.
  3. Add garlic and mushrooms and continue to sauté for another 2 minutes.
  4. Add 1 TBS broth, tomato, salt, and pepper and cook for another minute. Stir well, and gently scrape pan with a wooden spoon to remove any slight burning.
  5. Beat eggs well, and season with salt and pepper. Mix in chopped basil. Pour eggs over vegetables evenly and turn heat to low. Cover and cook for about 5 minutes, or until firm. Cut into wedges and serve.
    Serves 2

Wii and Wii Fit... plus Some

For my birthday I bought myself a Wii. With it I purchased the Wii Fit, Zumba 1, and Zumba 2. 
 I will be doing some of it every day and let you know if it is that effective.

Breakfast is for Winners

I'm not typically a girl who eats breakfast, mostly because I'm just not really hungry and don't think about it.  I've always heard that breakfast is the most important meal of the day, but is it really beneficial?

Some of the reasons listed are that breakfast boosts your metabolism for the day, puts you in a good mood, and gives you focus. One of my first goals along my journey is to eat breakfast every day.

Tomorrow is the first day of the rest of your life!

It's getting pretty late and I want to get a good start tomorrow. So I will say goodnight and hope you join me as I work towards my goals.  Get some sleep, we're going to need it ;)


Alright, I've heard that a great way to start any diet is with some good motivational quotes and/or pictures.  We'll start off with pictures of women who have, in MY opinion, the healthy body that I would like:

The world would have us believe that the skinnier you are, the prettier you are. I believe that the HEALTHIER you are the prettier you are. Each of the girls above are not fat, but not a twig. They have good curve and are better inspiration to me.

In the beginning... there was FAT.

My name is Whitney (Winny) and I have decided to share with you my journey from "fat" to "fit".  I will be trying different diets and exercises in an attempt to, once and for all, shed what has yo-yoed on my body for years. I will track my progress daily and share my results with you. Lets get started!
